Ingredients (2 servings):

  • 2 eggs
  • 50g melted butter
  • 4 lg liquid cream (60ml)
  • 2 lg coconut flour
  • 2 lg almond flour
  • 1 lgt baking powder
  • 2 slices of cheese / cheddar / emmentaler etc
  • 2 slices of ham (optional)

Beat the eggs, then mix them with melted butter, liquid cream, almond and coconut flour, baking powder and a pinch of salt. We divide the composition into 2 heat-resistant shapes, square or round, which you have, depending on how you want the sandwich to look :)

I used a 15 * 15 cm square heat-resistant form greased with butter and lined with baking paper. Bake the slices of bread for about 10 minutes at 180C, then take them out of the molds and leave them to cool.

And this keto grilled cheese sandwich is just WOW :)

Ingredients (2 servings):

  • 2 eggs
  • 50 g melted butter
  • 4 tbsp heavy cream (60 ml)
  • 2 tbsp coconut flour
  • 2 tbsp almond flour
  • 1 tsp baking powder
  • 2 slices of melting cheese cheddar / emmentaler etc
  • 2 slice of ham (optional)

Whisk the eggs, then mix them with the melted butter, heavy cream, almond and coconut flour, baking powder and a pinch of salt. Divide the mixture into 2 heat proof dishes, square or round, whatever you have or how you want the sandwich to look like :)

I used a square 15 * 15 cm pan greased with butter and lined with baking paper. Bake the bread slices for about 10 min at 180 C, then remove them form the pan and let them cool.

Heat the panini / sandwich maker (or pan). Add the cheese slices between the 2 slices of bread, cut it in 2, in order to get 2 sandwiches. Cook each sandwich in the panini maker until the are crisp and the cheese has melted nicely :) Serve them hot! Yummmm! :)

We are big fans of hot sandwiches, especially when I don't have the time / desire / ideas to cook, some hot sandwiches saves us quickly and decently I say :))) Today I made a variant of hot sandwich with avocado if cheese which was only successful for me, Ilinca only ate the cheese, but hey, a mom has to try :)))

Ingredients (2 servings):

  • 2 large slices of bread
  • 1 avocado
  • 2 slices of cheese
  • 2 cubes of butter
  • some baby spinach leaves

We heat the sandwich maker (I use the sandwich plates, but they also work like a triangle or electric grill. We cut the bread slices in half, grease them with butter, place slices of CHEESE or any cheese melts nicely: Emmentaler, Gouda, halloumi, cheddar, etc.

We also add slices of avocado, spinach and combine them. We cook the sandwiches in the sandwich maker until they are brown enough and the cheese has melted nicely. Great appetite! :)

    With this sandwich, especially since you can prepare olive paste and tuna pate a few days before, you will provide all your loved ones with a delicious homemade snack.

    Olive paste can be made 6-7 days before, it contains only olives and olive oil. It is perfectly preserved in the refrigerator, in a hermetically sealed jar. I won't tell you how tasty this pasta is on slices of toast rubbed with garlic. Try it too.

    Tuna pate can be made 3 days before preparing sandwiches. And it must be kept in the refrigerator, in a jar. Baked tomatoes can be stored in the refrigerator for 1-2 days, after they have cooled completely.

    So, if you have all these basic dishes prepared in advance, making a sandwich is a breeze.
